Relatively new on the decaf scene, Sugar Cane Processed decaf takes advantage of the sugar cane farms in Mexico to provide the Ethyl Acetate produced in the fermentation of sugar cane to decaffeinate this coffee.
To remove the caffeine, a lightly steamed green coffee bean is washed in the alcohol Ethyl Acetate, which bonds chemically with caffeine, and is then steamed a second time to cook off the alcohol and remove the caffeine.
Overall it is a more mild process than some other decaffeination methods, and helps the coffee retain much of its original flavor while still removing up to 98% of the caffeine.
